Zapiekanka – Polish street food

Very popular fast-food, easy to make at home.

Zapiekanka is basically a halved mini baguette, or French bread, topped with mushrooms and cheese and then baked. Served with mayonnaise and ketchup, sometimes also corn and chives.

Ingredients:

baguette, or other long-type-roll

butter

mushrooms

grated cheese

(you can also use ham)

topping of your choice (I like it with ketchup, corn and chives)

Blanch mushrooms with a bit of pepper and salt. Put them on halved and buttered baguettes, cover with grated cheese. If you’re using ham, place it under the cheese layer.

Bake in 180C for about 5-10 minutes, until cheese is melted and baguette crunchy.

Remove from the oven, top with ketchup, mayonnaise, chives and corn. Serve hot.

    One of my favourite foods from Poland, I even tried to recreate couple of times since I live in UK.
