Buttery cookies sandwiched together with a strawberry jam.
I just bought another baking-related cookbook. It’s The Great Scandinavian Baking Book by Beatrice Ojakangas. I’m positively surprised that it’s not just a recipe-only type of book. You can read about Scandinavians and understand a little about their love of coffee cakes and cinnamon 😉
Browsing through new recipes and choosing just one for a good start is very hard for me. But being lazy during Holidays helped me – I chose the easiest recipe in the whole book: Finnish cookies with a strawberry jam.

Ingredients:
115 g soft butter
1/2 cup sugar
1 egg white
1/4 tsp salt
1 1/4 cup plain flour
strawberry jam

Mix butter with sugar in a electric mixer. Add the egg white and salt. Add the flour and make a dough. Refrigerate 30-60 minutes.
On a floured board, roll the cookie dough out to about 2-4mm thickness. Cut small round cookies and bake in 175C (fan forced) for 7-9 minutes until golden brown.
Spread with a jam and sandwich together.
