Creamy & fruity inside and crusty on the outside.
I’ve found this recipe when I wanted to bake a cake on Sunday and my only requirement was that it had to be with peaches. And here it is: tasty and quick.
Ingredients:
– 300 g plain flour
– 165 g butter
– 135 g sugar
– 1 tsp baking soda
– 1 egg
– 1 egg yolk
– 1 1/2 tbsp sour cream or creme fraiche
Filling:
– 2 pockets of vanilla powdered custard (from Polish/Euro Deli – ask for budyn)
– 700 ml milk
– 3 tbsp sugar
– 3 big peaches or 5 small
Dough: mix all the ingredients and form a dough. Divide it to 2 pieces (2/3 & 1/3). Use the bigger one to line the base and sides of a round, 22 cm tray. Prick the sides and bottom of the dough with a fork and put it in the fridge. Wrap the other piece with a foil and place in the freezer.
Filling: Wash and peel the peaches, slice them thinly. Arrange the peaches on the dough and cover with puddings cooked in 700ml of milk with sugar.
Grate the frozen dough and sprinkle over the pudding layer.
Bake in 175C for 45 minutes.
