Delicious and sweet with crumbed topping.
Recipe from a great Polish blog (it’s called “kwestia smaku” which actually means “a matter of taste” 🙂 ). This cake reminds me about summer days in my grandmas house. When we were picking strawberries from her garden, baking together having lots of fun and just couldn’t wait when a cake will be cool enough to finally eat it!
Ingredients:
800 g strawberries (or any other fruits you like)
200 g soft butter
200 g icing sugar
4 eggs
250 g plain flour
1 tsp baking soda
Crumb topping:
• 100 g flour
• 50 g butter
• 50 g caster sugar
Preheat oven to 175C. Take a springform cake tin and grease it with butter or line with a baking paper. In a small pot prepare crumb topping: just mix all the ingredients over low heat (until they resemble wet sand).
Mix butter with icing sugar for a few minutes. Still mixing add eggs and flour with baking soda. Transfer to the tray, layer the strawberries and cover with the crumb topping.
Bake for 60 minutes.
